bounty! in the veggie garden

Bounty! The McCartney veggie patch came up trumps yesterday with the most bountiful snatch of veggies – a forest of celery, a jewelbox of beets and goldmine of potatoes, tangled baby carrots and crisp green onions.

The rabbits scored the carrots – next year we’ll be planting an easier-to-grow variety, and the potatoes went into a roast Spanish chicken dish pilfered from Nigella – absolutely scrumptious! Just lay chicken thighs in a roasting tray, tightly packed with chopped potatoes, red onion and chorizo salami sausages, drizzled with olive oil and sprinkled with dried thyme. Roast in 180 oven for an hour or until golden.

I also roasted the beets in foil for an hour and they are the most tender, earthy sweet orbs of purple – we devoured them with the Spanish chicken and raw baby spinach leaves.

The green onions and celery went into a creamy celery soup (Martha Stewart), though I wasn’t happy with the recipe – if anyone has a good one for celery, let me know.

There is nothing – I repeat – nothing like organic, homegrown veggies. The taste sensation is out of this world and sends me straight back to childhood.

There’ll be more harvesting after Christmas! Let’s just hope this fabulous rain continues to make our bounty thrive.

You look like you live on a farm, far out, what a brilliant score that is. I wish, even our grass is dead & the re-seeding washed away in all this rain.
Next house, of course will be a farm & we hope to be seriously self subsistant with food. Love all that you do & how much fun are the children having??!! So proud, love Posie
