making lemonade with cupcake lemons

Saturday 3 March 2012

What do you do when you make a massive batch of cupcakes for your book launch and you try out new papercups that are just a tad smaller than you're used to and you have a major, mega overflow?

You make lemonade.

Introducing my Clancy of the Overflow* cupcakes for my Australia-themed book launch tomorrow. Hope you stop by for a nibble!

* Hats off to you, Banjo Patterson.

You know what Tania, i reckon when people bake with these fancy cup cake wrappers (of which i have billions) they must prebake the cup cakes, then slice them down & position them into the wrappers, fresh, clean, spill free & none of the nasty oil-look on the base either, freaks me out, as i never get them looking picture perfect no matter how many times i have repeated a recipe. Well what this 'fancy cupcake' girl did was bake the cupcakes then trim the paper down 5mm and slide them into a brand new 'identical'($7 x 3pkts extra) wrapper no bleeding except for my wallet! Have just spent the last 2 days making 60 cupcakes for a friends daughters 21ST, baked over 200 to get the final 60 perffect. HOW DO I GET MYSELF INTO THESE SITUATIONS? Let me say it nearly tipped me over the edge, trying to perfect the whole look.X

Oh i love it Rachelle, i can totally imagine me baking a ratio of 1 out of every 3 worthy for a serious party!! I actually wonder if the fancy cup cake wrappers (Robert Gordon, i'm talking to you) are actually designed to fit any regular cupcake recipe. Donna Hay nails it, in her pretty pleated wrappers, they have 'give' & i have zero complaints. Love Posie

Ooh, I'll have to remember that, as I've always thought the same thing! The best thing I found though, was not so much the fancy cupcake papers, but these really cool wrappers that you put around the cupcake and normal patty case after they're cooked. I used them for my Mum's birthday last year.

I love those wrap around wrappers, too! They look fantastic and are so easy to use.

Have to say, though, the wrappers I used may have no 'give' in them but if you peel the paper off the cake, they are PERFECTION. Must be due to the waxy paper - but the outside of the cake is like it's been airbrushed.

If you need a wrapperless cupcake, then these are the perfect wrappers for them.

What kind/brand are they, Tania and where do you get them? I'm always in the market for good quality stuff. :)
