Healthifying Kids' Recipes - Pancakes

I loved writing this article on healthy milkshakes for children - Juice-y Shakes. It's so easy to sneak healthy ingredients into kids' food, if you're sneak-savvy.

Although I do consistently try to offer my children every type of food up-front, if their tastebuds still aren't ready, I must admit, I'm a shameless hider. And they're nonethewiser, yet all the more healthy for it.

This morning, I adapated Donna Hay's decilious pancake recipe (sans blueberries) by adding a powershot of secret ingredients. These ingredients can be subtle, but they do add an almost indefinable taste sensation that trains children's tastebuds for the less-processed and the more healthful.

I've highlighted the changes in red.

Pancakes

1 1/2 cups plain (all-purpose) flour, sifted
1/2 cup plain (all-purpose) wholemeal flour, sifted
2 teaspoons baking power, sifted
1/2 cup caster (superfine) sugar
1 1/2 cups milk
1/2 cup natural, unsweetened Greek yoghurt
2 eggs
75g butter, melted

Combine the flour, baking powder and sugar. Combine the eggs, milk, yoghurt and melted butter, and gradually pour into dry ingredients. Whisk until just combined. Cook and serve with lemon juice and a teensy sprinkle of sugar, pureed berries or stewed apples.

Hint: for lighter, more fluffy pancakes, flip them the moment bubbles appear on the first surface.

See i'm quite different, i preach healthy & make sure my children know every fibre, carb & sugar in their foods. Or as my youngest one says "is this good, does this have fiver in it??" Sure we might have to sit there & say "well it's good for you, you have to eat that egg plant" but lucky enough, turns out their favourite vegetables are brocolli (trees), peas, corn, capsicum, carrots & snow peas, pretty much the basics of any fridge. How do i get them to eat onions?? "That Shrek food, yummy yummy" & they do.
Oh & because i'm a total saint, i have only ever offered them multigrain bread since they started. I HADN'T thought to use wholemeal flour, so thanks for the tip, i'll add to the brown rice on my grocery list. Love Posie

I only make wheat pancakes - my kids have never had anything else - wheat pancakes, wheat waffles, wheat french toast - I just introduced them to home made syrup - which I could have poured down my throat - so delicious! TB
