1 3/4 C self-raising flour
1/4 C plain flour
4 tbsp oat bran
2 tsp cinnamon
2/3 C firmly packed brown sugar
2 ripe bananas
1/2 C milk
2 eggs
50g melted butter
method.
Preheat oven to 180°C. Line a loaf pan with baking paper. Sift flour, cinnamon and sugar into a bowl. Mash bananas and add whisked eggs, milk and melted butter. Add to flour mixture and stir until just combined. Spoon into pan, smooth surface and bake for 45 - 50 mins, until a skewer comes out clean. Don't overcook. Cool in tin 10 mins before turning out. Eat with slatherings of butter.
