A Cloud of Lemon Meringue Cake

Tuesday 27 July 2010

There's so much we pass onto our children, but the most telling and permanent of all are the things absorbed by osmosis.

Take lemon meringue, for instance. It has been a taste obsession of mine since childhood, and my own kids have naturally developed a taste for it, too. And fruit cake. And brie, amongst a myriad other delectables.

For Ella's 10th birthday, I made my first lemon meringue cake - what a triumph! A subtle lemon sponge sliced into layers and sandwiched with tangy, oozing lemon curd and piled high with clouds of snowy meringue topping, quickly toasted and served with slim silver candles. There was even a plastic horse (Ella's current obsession) up to its flanks in the snowyness.

Ella loved it - and I'm ashamed to say one quarter of this enormous cake is already gone into the belly of our family. Gone!

More, please!

And cakes like that made with loving care are the things that we remember far beyond the last crumbs on the plate. :)

Yummy! Only this week I realised I need to get my mum to write down her recipe for sour dough bread (handed down to her from her mum) not to mention her marmalade pudding.
