Gloria! Gloria! In Excelsis Deo!

I've found edamame! We're big fans of Japanese food in our house. Not only is it utter delish, it's also considered one of the frontrunners in terms of the ideal diet. The Japanese don't have a heck of a lot of heart problems and cancers compared to the rest of the world's population, that's for sure.

One of our very favourite Japanese dishes is edamame - or fresh soy beans. Blanched in boiling water until the pod begins to soften (around 4-5 mins) and served either warm or cold, they are sprinkled in salt and sometimes even doused lightly in mirin. You then pop these divine little green beads from their pod and nibble them up like rabbits. Even the kids love them.

AND you can feel the health unfolding in your belly as you gobble. Pure nutrition.

Husband discovered this snap frozen brand locally and I nearly fell over myself to clutch the pack. They are thawing on the kitchen bench as we speak and tonight it will be a feast of edamame (I like them cold), along with the delicious guacamole I made earlier - served with fish and salad (and okay... a corn chip or two).

I make the guacamole really simply - with fresh lemon juice, finely diced red onion, chilli powder, sea salt, freshly ground black pepper and huge dollops of low fat Greek yoghurt. If the kids aren't around, I'll also add a snatch of finely chopped coriander (cilantro). Fresh, healthful, mouthwatering.

Today is the warmest it's been all year, after an intense cold snap, and we'll be feasting outside on the decking.

I've had a few questions about where Husband bought the soy beans - it was Fyshwick fresh food market, at the Asian supermarket, at the back of the store in the freezer. You can buy them at most Asian supermarkets, usually frozen.
